Finding ways to reinvent your salad greens all year long can be one of the challenges faced by many real world home cooks. Even the top chefs in 5 star restaurants can find themselves sometimes raiding their pantries and food markets searching for inspiration. That’s exactly what this home chef was doing this weekend when I came up with this incredible husband and kid approved take on reinventing Kale.
This week, I am featuring a tasty new version for making Kale sparkle again for you.
Finely chopped kale greens mix and marinated in with my classic yummy apple vinaigrette. Topped with Pecans and sweet dried cherries this dish packs a two fisted knock out on nutrition. All the amazing vitamins and nutrients of Kale such as your B vitamins, calcium, good fiber, magnesium plus the cherries add the perfect sweet to balance out the slight tang of the kale and provide incredible cell boosting qualities being a major player of antioxidants.
Remember to get the most out of your green leafies you need to have some type of healthy oils added in. These healthy oils help the fat soluble vitamins in your greens to absorb properly into your cells. Hence the olive oil in the dressing plus the crunchy pecans.
And my favorite part is this salad is a perfect make ahead to serve for entertaining. Kale has such dense fibrous leaves it can sit for a at least 3 days as a salad mix.
Kale, Pecan and Cherry Salad.
1 bunch of green curly kale
1/2 cup dried cherries roughly chopped
1/2 cup of pecans roughly chopped
Apple Cider Vinaigrette: mix 1/4 cup apple cider vinaigrette with 1/2 cup olive oil, 1/2 tsp salt and 1/4 tsp pepper – whisk to combine
Wash and dry the kale, then strip the dense fibrous middle off the leaves. Take remaining kale leaves and finely chopped with knife. Place in large bowl.
Drizzle with apple cider vinaigrette. Add this slowly, a bit at a time, tossing occasionally until kale is nicely coated but not drenched and dripping.
Sprinkle with pecans and cherries and toss salad and toppings together. Enjoy!!!
