“Spicy Sweet” Sweet Potato Fries
3-4 Sweet Potatoes (medium size) – cut in half then slice into 1/2 inch thick wedges.
3 tablespoons Extra Virgin Olive Oil
2 tablespoons of Brown Sugar
1/2 tsp Cumin
1 1/2 tsp of Kosher Salt
Preheat oven to 425 degrees
Place sliced potatoes into a large bowl. Add the olive oil, brown sugar, and salt. Add the cumin and sprinkle lightly the cayenne pepper over the potatoes ( add more if you like it a bit hotter)
Best part now: use your hands to toss the potatoes in the spices until evenly coated.
On a half sheet baking tray layer the potatoes evenly. Place in the oven and cook for 15 minutes. Then turn them over on the tray. Lower the oven to 350 and continue to cook until they just start to caramelize about another 20-25 minutes.
Remove from oven and allow time to cool before serving. YUM YUM! Enjoy!
